After my first batch of pies from the The Pie Hole I knew I would be tasting Jenell Parsons delicious treats very soon. I was lucky enough to be contacted by Jenell to do some product shots of her awesome pies and was more than happy to seeing I get to eat the models!
First up is the traditional Lemon Meringue pie. This traditional favorite is made with a brown sugar meringue and a Meyer lemon curd so it’s a bit sweeter, the meringue was light and fluffy and the lemon curd had a great consistency.
Next up is the Key Lime Pie. The Pie Hole put a twist on this pie with the addition of tequila so it had a margarita feel to it. Like the lemon meringue this was a great pie, the curd had a perfect balance of sweet and tart, the Key Lime is sweeter than a regular lime and a more suited to desserts. Traditionally the pie is made with a graham cracker crust but Jenell uses a sugar cookie crust for this pie.
Now on to some savory pies. Here is a twist on one of my favorite dishes, the Mac and Cheese Pie. The mac and cheese was made with sharp cheddar and mozzarella then topped with Parmesan for a crispy crust, the sauce was beautifully creamy and the pasta was cooked al dente. This was a first having mac and cheese in a pie and it won’t be the last-a Pie Hole must try pie.
Next up we have a couple of Hand Pies. This is the Steak and Stout and when I had it the first time I fell in love and having it in this form was no different. The steak was melt in your mouth tender and the pie had a great filling to pastry ratio.
Lastly this is a Spiced Chickpea hand pie. With a lightly spiced vegetarian filling with sweet potato, green peas, chick peas and spinach. Even though I’m a big meat-eater I do love great vegetarian items and this was no exception. The spicing was a mild for the filling but still delicious-it had light tones of the flavors of Morocco . Overall this hand pie filled me up and was the perfect lunch, I’d recommend it to carnivores and vegetarians alike.
